The cheesemaking vats are of three types:
Round
Oblong
Double O.
These vats are ideal for pressed cheeses, Cheddar and some soft cheeses.
In the double O vat the heat exchange is from the surrounding water jacket which increases the
surface area in contact with the product. Its shape also allows the entire contents to be cut in one turn
of the cutter.
With addition of the optional lid milk pasteurisation is possible.
The oblong vat facilitates pre-pressing of the curd avoiding losses into whey container.
